I was looking through some of my old posts and found this one!  This was probably one of the best circuit type of workouts that I really enjoy!  Check it out – It’s a great way to use your household furniture in your every day workouts!

Organic & Gluten Free Italian Dinner

How do you say “delicious” in Italian?  Delizioso – according to google translate!  Last nights dinner is by far on of my favorite meals – Spaghetti and Meatballs with Cheesey Garlic Bread.  The best part about this meal was that it was all organic and under $15.

Pasta Sauce – Homemade

  • 1 28 oz. can of crushed tomatoes w/basil
  • 2 garlic cloves, minced
  • 3/4 of an onion, chopped
  • 1/4 tsp of salt
  • 1tsp of pepper
  • 5 tsp of sugar
  • 1 TBS of EVOO

In a medium size sauce pan, saute the onions and garlic.  Once the onions are sauted, add the tomato sauce, salt, pepper, and sugar.  Let this cook for about 45 minutes.  Taste for seasonings.  Depending on how sweet you like your sauce, you may want to add more sugar.

Turkey Meatballs

  • 16 oz. Ground Turkey
  • 1/3 green pepper, chopped very fine
  • 1 garlic clove, minced
  • 1/4 cup of parsley, chopped
  • 1/4 of an onion, chopped
  • 1 egg
  • Salt / Pepper

Blend all of the ingredients together and form into 1 inch balls.  Lay on a baking sheet.  Bake at 350 degrees for 35-40 minutes.

This is my home grown parsley!!!

Cheesy Garlic Bread

  • 2 TBS EVOO
  • 1 small garlic clove, minced
  • 5 slices of Ciabatta bread
  • 1 TBS parsley, chopped
  • 1/2 cup shredded sharp cheddar cheese

Mix the EVOO, garlic, and parsley together.  Spread over Ciabatta bread.  Sprinkle cheddar cheese on top.  Bake at 350 degrees for 15 minutes.  YUM YUM!!!!

Of course, cook pasta to go along with the three items listed above.  I chose to make Tinkyaga Fettucini, whole wheat Pasta.  This was my first time trying out this brand and I really enjoyed it.  This was actually the first time I’ve had wheat pasta and 100% enjoyed it.  I will never buy another other brand of wheat pasta!

And the final product looked like….oh my – so good!

So I know it must be hard to believe, but this entire dinner was under $15.  I calculated my dinner by taking the five ingredients I bought at Stop and Shop.  Plus averaging out the cost of my onion, pepper, and garlic from the Vegetable Share this week.  The only ingredients I did not need to buy were EVOO, Salt, Papper, and Parsley.

If I were to go to dinner in the North End in Boston, this dinner would easily cost $20 per plate and definitely wouldn’t be made with as much love 🙂

In all seriousness, a couple, on a date would pay a pretty penny on this delicious dinner and here you have it folk’s, you can have a delicious, gluten free, organic dinner made in under 1 hour for less than $15.

Late Fall Share – Week 2

So this week was the week 2 in the CSA Share for Farmer Dave’s.  We got a lot of delicious veggies and I can’t wait to cook this week!  Since I was sick last week, I feel like I didn’t put much effort into dinner!

My veggies this week include:

  • Green Peppers (2)
  • Onions (2)
  • Jalapeno’s (5+)
  • Turnips (6 small)
  • Carrots (6)
  • Spinach
  • Garlic
  • Sweet Potato
  • Apples (5)

This week I also made Whole Wheat Blueberry Muffins.  I have to say, they weren’t my favorite.  I was quite disappointed because the blueberries were so small and you could barely taste them.  Next time I make these, I would add mini chocolate chips or additional blueberries or apples to the batter and then bake.  Just as is, they were pretty bland.

I went for two walks today which felt really nice.  MA is getting this crazy warm weather right now for November.  I walked outside in a skirt and cardigan today and was sweating!  In total I walked 3.7 miles, so even thought I didn’t ride my bike as planned today, I walked a decent amount.  

Now its time to relax and watch Desperate Housewives on my laptop while the hubby plays the new Call of Duty video game.  Yes, I’m married to one of those!!

Monday workout = Fab start of the week!

Yesterday was the first day in a week that I finally felt like I was getting over this darn cold.  I swear it was my homemade Chicken Soup!  I also think that my fabulous run last night had something to do with it!!!  I probably could have ran longer but I didn’t want to push too hard since I didn’t work out all last week.

My workout last night consisted of the following: 

  1. 2 sets of Abs
  2. 3 sets of inclined sit ups
  3. 3 sets of biceps with my 5lb weights
  4. 50 Ab twists with a 6lb medicine ball
  5. Cardio included running for 25 minutes 23 seconds which was 1.8 miles running with 3 intervals each 45 seconds long at 7.7 speed on the treadmill and .5 mile warm up/cool down.

I must say, I felt wonderful when I finished!!!

Results - my heart rate was too high apparently. Probably due to my cold! But I burned 310 calories which was fabulous!

A lot of people say that they don’t have the motivation to work out at home and don’t bother spending the money on equipment.  I on the other hand LOVE working out at home much more than spending $40+ a month to go to a place full of sweaty people and sometimes wait for a machine to use.  Therefore I have created my own personal gym which has all of my favorite workout tools!

My treadmill, which is the newest addition to my gym is fabulous! I have two yoga mats (that I should probably do more yoga on!). I love my 6lb medicine ball, probably my second favorite item pictured here! I have two 8lb and two 5lb weights also!

Dinner on the other hand wasn’t all that fancy.  I had left over Chicken Soup and the hubby ate Pasta Alfredo with Romanesco Broccoli which came from last weeks Vegetable Share.  Of course since this was the first time I had ever even heard of this type of broccoli, I had to try it – and it tasted exactly the same as regular broccoli!

For dessert I made apple chips!!  These are so delicious, so easy, and so good for you!  YOu need to make the apple slices super thin.  For every apple you slice, use 1/2 TBS of sugar.  Depending on how much you enjoy cinnamon, I just sprinkle it right onto the apple slices.  Remember to spray the baking sheet so that the apples don’t stick!  Bake these at 350 degrees for about 15 minutes.  Keep an eye on them since they could actually cook quickly and you could burn them – yikes!

Mine were slightly overcooked, but they really have a nice crunch!

Chicken Soup cures the Soul

Why is it that Chicken soup can really just cure about anything?  I was feeling so sick
over the weekend, I decided to make some homemade Chicken Soup.  Whenever I would go to Portugal to visit my extended family, the first meal we would eat was Chicken Soup.  My uncle is a butcher and owns a farm so more often than not; the chicken soup would extremely fresh – which is very unlikely here when you buy a store bought chicken.

My Chicken Soup Recipe is super easy and extremely
affordable coming in at $10.19 to feed 4 people:


  • 1 TBS EVOO
  • 1 large garlic clove, minced
  • 1 small onion, chopped
  • 2 Bay leaves
  • 1 Split Chicken Breast
  • 2 cups noodles
  • 7-8 small carrots, chopped
  • 5 celery stalks, chopped

Heat the EVOO, garlic and onion in a large sauce pan until the onions are translucent.  Once the onions are cooked, add the split chicken breast and bay leaves.  At this point you want to add enough water to the saucepan.  I usually fill the pan 3 quarters of the way.  Let this cook on medium/high for about an hour.  The longer you let the chicken cook the better the broth will be!  The chicken will fall right off the bone!  Now, add the celery, carrots, and noodles.  Let this cook for about 15 minutes.

Sooo good, I can't wait to have another bowl tonight for dinner!

The way I calculated how much the dinner costs was:

Vegetable Share comes out to $16.28 per week.  Since the carrots, celery, onions and garlic only makes up 1/3 of the vegetables I got this week; I figured it costs about $5.42. 

The chicken was on sale $.99/lb and I cooked 3.18 lbs. – $3.14

I only used about ½ a box of pasta – $.63

The EVOO & bay leaves were the only two ingredients I already had at home.  Considering the portion size, it couldn’t equate to more than $1 total for the two ingredients.  Not bad eh?

In addition to making some chicken soup, I was in the mood for some apple pie.  It was a great day to watch football (Go Pat’s!) and catch up on the X Factor!  I have no idea who my favorite contestant is right now because they are all so different!   The young kids are truly amazing!  What’s your favorite fall TV Show?

How delicious does this look?!?! I also can't wait to go home and have another piece of pie for dessert! I really need to run tonight!

Today’s lunch was pretty delicious!  On Monday’s I usually like to start off my week with Subway.  I get the Veggie Delight with either provolone or swiss, depending on my mood.  Today’s I went with Provolone.  The sandwich is 230 calories without cheese – which is fabulous.  I always get a foot long for $5 and two bags of chips so that I can save half of the sandwich for the next day along with a bag of chips.  The total bill comes to $7.68 – so two lunches, under $4 each – can’t beat that!!

I love how you can make this sandwich to order. I get lettuce, tomato, red onions, jalapeno's, black olives and green peppers. Sometimes I also add cucumbers or pickles, depending on my mood that day 🙂

I’m looking forward to running today after work.  The weather is phenominal for November in Boston!  I can’t be sure how far I’ll run considering I’m still fighting this cold – but as long as I get a good sweat going, that’s more than I did last week!

Sunday Funday – Go Patriots!

Watching football is a weekend MUST if you are married to a football fanatic!  Go Pat’s!!!!

While the hubby watches football, I like to bake and cook up some goodies.  Today I made an apple pie.  I was in the mood for a little bit of comfort food since I’ve been sick.  We also had some home made chicken soup.

Boston – What a wonderful city!

I love going into the city – especially when its with a special friends!!!

We started off the day with a few cocktails at a bar right outside of North Station!  Once we were ready to brave the cold wind, we took a walk through the North End and made a quick stop at Lulu’s Sweet Shoppe!   I have only been to this place two times and both times I have been soooo happy with the end result – a fabulous cupcake 🙂  The shop is pretty tiny, but they have an assortment of delicious cupcakes that you just can’t resist!  I indulged in a peanutbutter frosting chocolate cupcake (I love chocolate!!).

The one I ate is on the end shelf second one in from the left – soooo good!

As we walked, which we walked a lot yesterday, we enjoyed some wonderful cupcakes.  Then we arrived at our destination – The Boston Aquarium.  What a great day, it was!  We had so much fun, I can’t wait to go back!!!

 I’m still feeling sick today so all I ate was a bowl of fruit so far.  I’m hoping to feel better so I can get a good sweat in!  Not working out for a week makes me nervous that I’ll just continue to put it off!!  Hopefully Monday I’ll be up for some exercise!
